Mediterranean Power Breakfast Sandwich

One of the most versatile sauces. An intriguing blend of red jalapenõ peppers that complements the finest chili peppers. The perfect combination of sweet and heat!

Ingredients:

Scrambled Eggs:

4 cups (1 L) Egg whites

1 cup   (250 mL) E.D.SMITH® Saucemaker Sweet Chili Sauce

1/2 tsp  (2.5 g) Salt

1/4 tsp (1 g) Pepper

2 tbsp (30 mL) Canola oil

Sandwich:

24 slices Sprouted grain bread with seeds, toasted

1 3/4 cups (425 mL) Hummus

48 slices  English cucumber

3 Avocados, peeled, pitted and thinly sliced (360 g)

3 cups (160 g) Alfalfa sprouts

2 cups (300 g) Feta, crumbled       

Directions:

Scrambled Eggs: Whisk together egg whites, 1/2 cup (60 mL) of the Sweet Chili Sauce, salt and pepper in a large bowl. In a large nonstick skillet, heat half of the oil over medium heat; cook half of the egg mixture, stirring, for 4 or 5 minutes or until soft curds form. Transfer to a small hotel pan to keep warm and repeat with remaining oil and eggs.

Assembly:  1 order (1 sandwich): Lay 2 slices of bread on a clean work surface. Spread 2 tbsp (30 mL) hummus on one slice. Top with 4 slices (11 g) cucumber, 4 slices (30 g) avocado, 1/4 cup (13 g) alfalfa sprouts and 2 tbsp (25 g) feta cheese. Drizzle with 2 tsp (10 mL) Sweet Chili Sauce. Cap with remaining slice of bread.

To serve, cut in half diagonally.

Tip: To add extra flavour, add an additional 1/4 cup (60 mL) Saucemaker Sweet Chili Sauce to the egg whites before cooking.
